Apple pie recipe with cooked apples?

I'm looking for an apple pie recipe where you cook the apples with a little water and lemon juice before you put them in the crust.Apple pie recipe with cooked apples?
Joy of Cooking Apple Pie II has you cook down the apples a bit with cinnamon, sugar and butter but you could use just a little lemon juice. You only cook them for 10 minutes so they soften a little but not mushy. Then you can pour and heap it into a crust, lay the top crust over. This way the when the apples and crust cook there isnt' a huge gap between them like when you use uncooked apples. I don't understand why you would want to do that. You'd end up with mushier apples than you'd normally get in an apple pie.

you don't want to do that, you want sugar, lemon juice and Cinnamon
slice your apples in a sauce pan add just a little lemon juice about 1 tsp sugar and cinnamon to taste add about 1/4 cup water so the apples don't scorch -- cook over low heat till almost done just a little crisp yet - then mix about 2 Tbsp cornstarch in a little water and mix in the apple mixture and


continue to cook over very low heat till the thickening on the apples becomes translucent --- pour into crust and cover with top crust and bake as you would any other pie......
