You could make a homemade pizza.

Salmon burgers...

1 can salmon

onions, peppers cut up

1 tsp lemon juice

1 egg

1/4 bread crumbs

seasonings

mix ingredients, form patties, and pan fry in a little butter until brown.

You can eat this with bread or by itself with a salad.

You can also make tuna salad with noodles.

1 box macaroni noodles

relish if you like

seasonings that you like

onions, green peppers, celery if you life

2 cans tuna.

mayo

(This makes alot so it can last for a while.)

Cook noodles according to package. Cool noodles. Add tuna, veggies, seasonings, relish, and enough mayo to coat everything. Chill, then serve.Help, Recipes for Cooking for Pickey eater.?
I would suggest that it is time for your niece to be introduced to an expanded cuisine. She is far too old to be babied in this way.

You make your favorite dishes, keeping her allergies in mind, and serve them to her. Insist she at least try each dish and if she doesn't like it, have fresh fruit on hand for her.

This is not meant to be a 'lesson' for her, it truly is intended to broaden her appetite and let her experience new tastes. You must remember that our taste buds do change, they mature like everything else on our bodies. What she disliked when she was young may very well not be the case any more.

Except for eggplant. Eggplant is evil and has been since I was a child, so, some things never change.
pita pizzas are a good one. Buy a package of pitas and spread tomato sauce on, grate cheeseto sprinkle on them, then have a variety of cooked meats/ raw veggies available so you can each top your own. Pop them in a 350 oven for 8-10 mins and they are great!

try a beef stir fry. cook the meat first and cut it into bite sized strips, throw them in a wok or your largest frying pan and add a pre-made stir fry sauce (in the grocery store) then add a cup of brocolli a cup of green and/or red peppers and 1/2 cup of snap peas. stir continuously for 8-12 mins... serve on a bed of rice or pasta.
if she is 16 and doesnt like what you fix, either stick to hamburger helper, tell her to cook, or to eat what she brought with her!
why you just go to food. yahoo.com

you can also make baked spaghetti you make the spaghetti and layer it in a pan with smoked sausage and mozzarella cheese
If she's going to be there for a few weeks, you'll drive yourself crazy trying to please her. Get her to help with dinner. Apart from her allergies, I wouldn't cater to her, she's a big girl now.
