I am making a sea food soup and it asks for heavy cream.

no, heavy cream is sold in the dairy section with the milk. It is just cream (all the milk has been separated out of it) they also sell whipping cream, half and half, and light cream. Heavy cream and whipping cream are the same thing. Whipped cream is sold already sweetened and whipped in canisters. (Cool whip and Redi Whip are not the real thing. They are imitation whipped creams).





Cream is generally sold with a fat content of 35-45%. Cream needs to have this high fat content or it cannot be whipped. Both whipping cream and heavy cream fall within this category.





I bought some heavy cream last night. The stuff labeled


';whipping cream'; had 1 gram less of fat than the stuff labeled ';heavy cream';. Its kind of like the thing with ';skim milk'; and ';fat free milk';. They have different names but they are both the same thing.





The labeling is for marketing purposes. A lot of people are confused about the two. If a grocery store just had cream labeled ';heavy cream';, they wouldn't sell as much because people looking for whipping cream would be confused and wouldn't buy it.





And, whipping cream is NOT sold sweetened, as someone else suggested.
Sometimes it is called heavy cream and sometimes it is called whipping cream. Same thing but it is not Coolwhip. It is cream that can be found in the same section as milk in your grocery store.

use PRESIDENT brand cream, they are available in small tetra pack packaging, most chefs swear by them, it has a wonderful delicate flavour profile.
