Recipes for cooked cauliflower?

my boyfriend is diabetic so he has to watch his carbs. i just read that cauliflower can be substituted for potatoes??? how do you guys do it. he hates cauliflower so if i can switch it without him noticing it would be a huge blessing! thank you!Recipes for cooked cauliflower?
My husband is diabetic too, and I've done the cauliflower ';switch'; before:) ... Cook them until very soft; drain really well and mash the heck out of them (a blender,mixer or food processor is best); add butter, salt %26amp; pepper (just like potatoes. You might need to bake it a few minutes, if it's too runny though ... You can also cook it very al dente (quite firm) and use pieces in place of potatoes in your favorite potato salad recipe .... Try substituting Spaghetti Squash for pasta in spaghetti dishes too:) ... and we found that eating tofu will lower his blood sugar as much as 30 pts after a meal!! Slice some extra-firm into 4 thick slices; a little olive oil on all sides; sprinkle with oregano %26amp; salt %26amp; pepper and grill on both sides on the BBQ (tastes a little like fried mozzarella)....or mash up some silken tofu until it's really creamy and add it to anything to thicken. It has no flavor:) ... If you ever bake cheesecakes, you can substitute all the sugar with Splenda, and use sugar-free crushed cookies for the crust:) ..... Keep lots of sugar-free pudding, jellow %26amp; popsicles on hand for snacks too:) Breyer's makes really good sugar-free ice cream, and their low-carb has virtually no sugar too.....Keep lots of sugar-free Cool WHip in the freezer. Cut up the cauliflower so each flower is apart cut anything left


small also now put olive oil in the pan on med .heat add a small amount of onion ,salt ,pepper ,and garlic powder, cook untill tender, litely browned in spots . you will love it .

VELVEETA CHEESE SAUCE FOR COOKED


CAULIFLOWER OR BROCCOLI





1 tbsp. butter


1 tbsp. flour


1 c. milk


1 1/2 c. cubed (1/2 inch size) Velveeta cheese


1/8 tsp. salt


1/2 tsp. sugar


Dash of pepper


Paprika





Melt butter in small saucepan. Remove from heat. Blend in flour until smooth. Gradually add milk. Return to low heat, stirring constantly, until beginning to boil. Add cubed cheese and continue to stir until cheese is melted. Remove from heat. Add salt, sugar, and pepper. Pour over cooked vegetables just prior to serving. Sprinkle with paprika.
steam the cauliflower till soft but not mushy. mash like you would potatos, put in a buttered dish sprinkle with shredded chees and a few bread crumbs and bake till cheese melts and crumbs are golden
Try this one with the cauliflower instead of the broccoli. It's really good.





Super Broccoli Casserole





2 boxes or 1 bag frozen, chopped broccoli, cooked and drained


2 eggs beaten


1 sml onion, minced


1 can cream of mushroom soup


戮 cup mayonnaise


1 cup grated cheddar, jack, or mozzarella cheese


1 cup cracker crumbs


录 cup butter





Combine first 6 ingredients, add to buttered 9x11 casserole dish. Sprinkle with cracker crumbs and dot with butter. Bake at 350F for 1 hour.
I don't know much about carbs and all that.One way to make it would to cover in egg yolk, dip in flour and bread crumbs, and any additional flavor you'd like like dill weed or roasted garlic and herb spice,or even garlic powder.That is where the flavor part is gonna change.Then you could deep fry it in olive oil at 350 degrees to 375 degrees.Do not put in too much breading crumbs in the mixture for batter.Fine grind would be good or Japanese panko bread crumbs.When putting into the olive oil, dip and hold for a few seconds in the oil, don't drop it in.this will help it float when you do release it.Season it again with seasoning salt when drying on a paper-towel or rack.

You can add melted cheese to all of these, but I doubt if you can change the taste.





How about cooking things he really likes.
That's gonna be a toughie. Steam it, mash it up, make a roux out of flour and butter, lightly salt mix in with the mash and cook lightly, add cream or milk to get the right consistency. I don't know how you are going to disguise the taste of cauliflower though. Good luck
I am diabetic also ans wrote this recipe for a substitution for mashed potatoes. I like it better with spuds, much better flavor. Give it a try and tell me how he likes it!





Mashed Cauliflower





1 陆 lbs. cauliflower fluorites


Salt and pepper to taste


2 Tbs. unsalted butter


录 cup chicken broth





In a Dutch oven, boil about 3 quarts of water add 1 tsp. salt and cauliflower. Cover and boil 15 minutes or until tender. Drain cauliflower and push through a potato ricer or mash with a wire masher. Add butter, and chicken broth, mix until smooth and creamy. Season with salt and pepper to taste. Serve just like potatoes with your favorite toppings like gravy or sour cream. Serves 6 to 8


This is a great local healthy alternative to mashed potatoes. Very tasty and a added flavor.
