I just bought a Crock Pot what recipe or what can I cook in it....?

I have cooked leg quarters overnight and potatoes...however I need some Ideas...it is a 5 quart crock pot..





Can you cook rice...what about dry beans...if you have any experience or knowledge I would surely appreciate it. Thank you for your help.I just bought a Crock Pot what recipe or what can I cook in it....?
Crockpot Enchiladas





Ingredients


1 (14 ounce) package corn tortillas or flour tortillas (whatever size fits in your crock pot)


1 1/2 lbs cooked ground beef or 3 cups shredded cooked chicken or shredded cooked pot roast


1 (20 ounce) can enchilada sauce


1 teaspoon cumin


1 1/2 cups light cream cheese


1 onion, chopped fine


2 cups shredded cheddar cheese or monterey jack pepper cheese





Directions


1.Brown your beef or cook the other meat you are using.


2.Mix cooked meat, cumin, cream cheese and onion together.


3.Spray inside of crock pot with nonstick spray, then pour a little enchilada sauce on the bottom.


4.Place one tortilla in the bottom of the pot.


5.Cover with some of the meat mixture.


6.Pour a little enchilada sauce on top of meat.


7.Sprinkle some cheese on top of sauce.


8.Add another tortilla and continue layering until you run out of meat mixture.


9.You should still have some cheese and sauce left.


10.Top with a tortilla, then pour remaining enchilada sauce over all.


11.Cook on HIGH for 4 hours.


12.When it's done, sprinkle remaining cheese on top, replace lid until cheese melts.


13.Cut into wedges with plastic spatula to serve.

whatever you do, do not add salt to beans, they will be tough





Black Beans and Rice





From the kitchen of Martin James 鈥?Copenhagen, Denmark





1 1/2 pounds dried black turtle beans


1 large bell pepper, diced


1 hot pepper (optional)


Tabasco (optional)


4 onions, diced


6 cloves garlic, chopped


3/4 cup celery, diced


1/4 cup parsley, chopped


2 tablespoons oregano, chopped


2 tablespoons basil, chopped


2 bay leaves


Pinch of ground cloves


1/2 teaspoon ground cumin


4 beef bouillon cubes


1 pound lean bulk pork sausage


1 pound pork, boneless, cubed


1 pound stew beef chunks


1/2 pound ham, smoked (1/2-inch cubes)


1 1/2 pounds smoked link sausage cut into 1'; to 2'; lengths


Salt and pepper to taste


2 tablespoons vinegar





Beans: Wash and look for gravel then soak overnight in a bowl being sure beans are well covered with water. For cooking use a large crock pot.





Meats: First, brown bulk sausage in a skillet and pour off excess grease. Add other meats and stir to brown. Add bell pepper, onion, garlic, celery, and spices. Salt and pepper moderately, taste after cooking several hours and add more if needed.





Add beans and soak water. If necessary add more water to cover entire ingredients by at least two inches. Stir in four bouillon cubes. Cover and cook on crock pot HIGH for three hours then turn to low for at least six hours.





If you enjoy hot and spicy foods add the hot pepper (jalapeno, habanero or whatever you like) and Tabasco. If you don't like it hot, then leave them out or serve the Tabasco at the table.





Serve beans and meat over rice. I have found brown rice to be quite tasty, but white rice is fine too.





Serve in a soup bowl and top with fresh chopped onion.

Go to the Supermarket, Buy a piece of beef, get fresh onion, scallion, thyme,butter, pepper, tomato,-not the artificial thing in bottles.


Go home and cook! Meat and butter first, with a touch of salt, when it getting tender add your seasonings-(your goodies). And if you want rice with it, after it done cook add two cup of rice in it, throw water till it just cover the rice, cover and cook at mid-range fire, when water start to dry out take off cover and set at simmer, stir with a fork, not a spoon, when rice is soft turn of pot. Take out a plate full, let it cool,

I have crockpots in all shapes, sizes and colors and just won one for $111 from a contest online. It's a Cuisinart 6.5 Quart Programmable Slow Cooker. Can't wait to get it. I do a LOT of cooking in my crockpots!





Here are a few of my favs.


Crockpot Sweet-Spiced Sweet Potatoes





2 lbs. sweet potatoes, cut into 1/2'; pieces


1/4 cup dark brown sugar, packed


1 tsp. ground cinnamon


1/2 tsp/ ground nutmeg


pinch of salt


2 tbsps. butter, cut into 1/8'; pieces


1 tsp. canilla extract





Combine all of the ingredients except the butter and vanilla, in a crockpot. Mix well. Cover and cook on LOW for 7 hours. Add butter and vanilla; stir to blend.


Makes 4 servings





Crock Pot Coconut Rice





28 fl.oz. milk


14 fl. oz. coconut milk


4陆 oz. aborio rice


2 oz. fine (castor) sugar





1. Place all ingredients in the crock pot.


2. Wisk until combined.


3. Cook on low for 8 hours.


Serve with stewed fruit.





I am NO Betty Crocker so how about a little quick fix for dessert!

I make mexican beans in it...I dont measure though :(


Here is my ';recipe';


Get a small bag of pinto beans, take out all the rocks and rinse the beans


Dump into crock pot, add enough water to cover the beans about an inch. SORRY I dont measure haha


Add some Pork Salt or bacon. I use pork salt.


Add spices, salt pepper, garlic powder, onion salt and cumin.


set on LOW, let it cook about 7 hrs. Check it occasionally or on your lunch break or whatever and make sure they still have liquid. If they are getting dry on top add water. you can stir them occasionally too.


Hope that all makes sense!
You can fix a stew in a crock pot. You put in what meat you want. Let that simmer for about 3 or 4 hours in the crock pot. Then get some potatoes,cut up some carrots, not real small,and cut up some celery. Put them in the crock pot with your meat. Let that simmer until you get ready to eat.
I don't know about rice or dry beans in a crock. However, I've made great ribs in the crock that only require a quick stoevetop sear prior to cooking. This entire browning step can be skipped but if you have the time and patience, brown the meat first for superior flavs and appearance!


So, brown meat if possible. Srinkle with salt, pepper and onion powder. Add a half a bottle of your favorit BBQ sauce and 1/2 cup wine. or beer ! Cover crock, turn on High for 4 hrs or low for6 hrs. yUMMY!

There are hundreds of recipes for crock pots on the internet. I have a Company's Coming cook book which is great if you can get your hands on one.
My buddy Libby has the best ';beans and rice'; recipe on here so far, so I won't step on her feet.......BUT, as far as meats go, welcome to 'easy does it' cooking:








Any type of cheap, tough cut of meat can be magically transformed into a delicious, tender ';melt in your mouth'; dish........One very easy one to start with is Pulled Pork........





1, 3-4 pound Boston Butt (Pork Shoulder or Pork Butt)


1 can Campbells French Onion Soup





Yes, that's it........have the butcher cut the pork so that it will fit into your crockpot, as I don't know if your crock is round or oval, which mine is.....





Place the roast fat side up in the crock, arrange to fit. Pour entire can of soup over the roast. If you like, you can add ANY spices at this point that you like: cayenne, black pepper, garlic powder/salt or whatever you prefer........I like to do mine with just the French Onion Soup, as from there you go ANY direction with it. Plug in the crock pot, and let it go on HIGH for about 8 hours. Do NOT open for the entire time, each time you open it, you'll have to add 30 minutes to the cooking time.....





After you remove the pork from the cooker, shred it and you can





Serve it with pork gravy (in a pouch, or canned is fine) mashed taters and a green veggie of your liking





Add BBQ sauce and serve it on buns with cole slaw for pulled pork sandwiches,





You can roll it in flour tortillas, place them in a baking dish and cover with enchilada sauce (canned, your favorite, either red or green) Bake at 350 till heated through.......
